It's now midnight and I have just finished making a cake for my family's Easter celebration tomorrow, but I'm thinking it might be a disaster. I messed with the recipe. A lot. I didn't intend to mess with it, but the magazine I found the recipe in requires an online subscription to get the made-from-scratch recipes for the cake and icing, or you can substitute with regular cake mix, but they didn't give a substitution for the icing. I wanted something easy, so I thought I'd go with a Cool Whip based icing and I looked some stuff up online quickly before I headed to the store. But of course the store didn't have the one main ingredient (instant strawberry pudding, does that even exist?) but I thought I remembered some other recipes using just strawberry jello and cool whip, so I grabbed that stuff.
So I got home and I put the kids to bed and then I started on my cake. I looked up the recipes again and it didn't look too promising. I should have gotten instant vanilla pudding and used red food coloring - there are lots of recipes with great reviews using instant pudding, not so many with gelatin. But of course by now the kids are in bed and Casey is at work and won't be home till midnight, so I was stuck. I did find and use a recipe with cool whip and jello, but I wasn't sure it would work. Well, now I've done it and I'm still not sure it will work. It's pretty sloppy. It's in the fridge and I'm hoping it will set a bit better by tomorrow. I'll try to take some pictures and let you know how it turns out.
